Fried Polenta with Parmesan and Rosemary


In my hometown there is a big holiday in January, where people gather in the main square, drink bisò or vin brulé (mulled wine) and eat all kinds of street food. My favourite is fried polenta. In my family we do not usually eat polenta, but I found an easy, delicious and healthy snack made with polenta!
I found this recipe on Jamie Oliver's book Jamie's Italy and I cannot say why I didn't make it before I accidentally glanced through this book in the public library.

First of all you have to make polenta: it is made of cornmeal, which has to be boiled in order to obtain a thick texture. You can find a good recipe here (it says to add butter and Parmesan, but you can do without).

This is the recipe for fried polenta.

♥ Ingredients ♥
grated Parmisan
salt and pepper
cornmeal
fresh rosemary
Make polenta, and when it's ready add parmesan and season with salt and pepper. Pour in a square bowl/dish (it shouldn't be taller than 2-3 cm) and let it cool down.
Cut the polenta in small squares, cover with cornmeal (the same you used to make polenta) and fry for 5 minutes until they become crispy. While frying add some fresh rosemary: it will add more flavor!
Put on some kitchen paper to mop the oil, let cool down a bit and... eat!

I love the crispness of the outside and the softness of the inside! Plus, I also love rosemary and the fresh taste it gives.

Vanilla and Muesli Cookies


This is my favourite recipe for cookies: vanilla cookies. It's really easy and yet delicious. The best thing about this recipe is that you can add chocolate drops, coconut, cinnamon, whatever you want!
To make them more crunchy and tasty I added some muesli on the top (a mix of cereals and coconut).

Ingredients
225 g flour
130 g butter
125 g sugar
1 egg
1 tsp vanilla powder
muesli

Heat the oven at 180°C and place some backing paper on a pan. Mix together butter and flour, then add sugar, vanilla powder and the beaten egg. Work well into dough, then roll out (make sure to sprinkle some flour on the surface, otherwise the dough will stick to it!) until the dough is approx. 1cm thick. Cut the cookies, then add some muesli on them and bake for 15-20 minutes, until they become of a nice honey-like color.
